My philosophy is ‘Think Global, Act Local’, while trying to source the maximum number of ingredients locally, keeping the seasons in mind. At Republic, I would be emphasising on modern day healthy lifestyles such as Vegan, Vegetarian, Gluten free menu options, paired with natural and biodynamic wines from small artisan and individual producers.
